The washed processing on this lot really helps separate this Guji from what you would expect from the Sidama region. Making for a more complex and exciting cup, bring out very unique flavor characteristics, balanced and not overly fermented or berry'ish as you would typically find in a natural process Guji. We are getting tea notes, with a mouth filling acidity, like a mango. A little dark honey, and floral reminiscent of violet blossoms.
This Grade 1 quality washed Sidamo coffee is from the Hagermaryam ward, located within the Guji zone, which lies within the Southern Nation, Nationalities, and Peoples Region (SNNPR). There are roughly 700 farmers that contribute to the privately owned Cheri mill. The coffee goes through a single fermentation for up to 18 hours and is then dried for 10-14 days depending on the weather.
