This coffee was part of the Best Cup Colombia Auction from Cafe Imports. A beautiful, and very rare Bourbon Rosado (Pink Bourbon) from Huila Colombia.
William had the foresight to section off a portion of his farm for a few specific varieties. We were lucky enough to secure a small lot of his Pink Bourbon (Bourbon Rosado) that turns pink when ripe.
We scored this coffee at a 90.25. With notes of cherry cola, plum, mango, currant, and honey sweetness.
Pink Bourbon is cultivated from a hybridization of Red and Yellow Bourbon. It's very rare, but the producers say it is quite resistant to rust. Pink and Orange Bourbons are very difficult to produce with consistency. The recessive genes leading to the expression of these colors are easily thwarted by the presence of yellow and red genes in a given pollen grain. A carefully isolated and contained lot can do quite well and preserve the unique color and character of this variety, though this is quite hard to find.
