The cherries are then transferred to fermentation tanks, where they undergo a 48-hour controlled fermentation process. During this stage, specific bacterial cultures are introduced to guide microbial activity and promote the development of delicate floral compounds.
Following fermentation, the coffee is dried under carefully controlled conditions to preserve the delicate aromatic characteristics developed throughout the process. The gradual reduction of moisture allows the floral notes to remain vibrant while maintaining balance, clarity, and cup stability.
The final step is a stabilization period, during which the coffee rests in a protected environment, allowing moisture to equalize and flavors to fully integrate.
The result is an elegant and expressive coffee with pronounced jasmine florals, delicate sweetness, and a refined aromatic finish.
